MayaMan provides support for Maya's Render and Display Layer mechanism for visibility control and provides a way to render all objects in a layer as RiMatte objects.
MayaMan uses the Display Layers when it is doing a Preview and ignores them when doing Render Single Frame or Render Sequence. The RiMatte override is only applied if the layer has Enable Overrides turned on.

To have an entire Render/Display Layer have it's objects handles as RiMatte objects add a boolean attribute to the layer node called MayaManMatte. The easiest way to do this is to RMB over the layer in the Layer Editor and select the Attributes button which will open the Attributes Editor then invoke the Add Layer Attributes button in the MayaMan menu.
The Render Pass Options of a Display Layer are ignored, at some stage these values may be used to drive Extra Output Channels.
